What are the health benefits of Kombucha Tea?
Detoxification
Detoxification produces healthy livers and aides cancer prevention. One of kombucha’s greatest health benefits is its ability to detox the body.
It is rich in many of the enzymes and bacterial acids your body produces and/or uses to detox your system, thus reducing your pancreatic load and easing the burden on your liver. Kombucha is very high in Glucaric acid, and recent studies have shown that glucaric acid helps prevent cancer.
I know two people in my immediate circle of friends who have had cancer (pancreatic and breast) and fought it into remission without any chemo or radiation therapy. Instead, they warded it off by detoxing their lives (going 100% organic, removing chemical cleaners and agents in their home, changing their diet to be at least 80% raw or fermented, etc.)
Central to the detoxification process was drinking Kombucha regularly. Even Alexander Solzhenitsyn, the recently deceased Russian author and nobel-prize winner, in his autobiography, claimed that kombucha tea cured his stomach cancer during his internment in soviet labor camps. (And because of this testimony, President Reagan used Kombucha to halt the spread of his cancer in 1987. You’ll note he didn’t die until 2004, and that was from old age, NOT cancer.)

Please remember that everything gets washed with vinegar before use, your bottles, any cutlery, hands etc. Only use glass containers and no metals or plastics. I use 1 litre mason jars Make sure to remove any rings as well
It is recommended that you start with Black or Green tea when starting out. After you have a good understanding of what the scoby looks like and how those two teas work you can start using white and rubus as you know how to watch out for issues.
For every I litre of tea you add 1/4 cup of sugar (I personally use organic cane sugar, but white sugar is fine. You have to use sugar though so no honey, maple syrup or agave) You let the tea sit for 12 hours or longer until the tea is room temperature. You can remove the tea bags after 5 mins if you wish but I just leave mine in until I deal with the scoby.
After your tea is at room temperature wash your hands with vinegar and place a scoby into your batch of tea as well as 1/2 cup of previous kombucha or if you don’t have enough you can use 1/2 cup of white or rice vinegar or apple cider vinegar. I have used only apple cider vinegar to date. Place a cover on the tea and let it sit in the warm place for a minimum of 7 days but it can sit upwards to 30 days. I let mine sit for 11 days.
After your kombucha has sat for as long as you want you pull out the scobies, you will have another scoby that forms on top so every new batch creates a new scoby. They multiply like gremlins lol The longer it sits the more sugar is removed from the batch as the scobies eat the sugar and that is how they are created.
Once you have a surplus of scobies you can either compost them or there is a way to dehydrate them if you want to use them in the future. I just use a large 2 litre mason jar to house them all and make them new tea every 30 days. Remember if you do this method they need new tea every 30 days as they eat all the sugar if you have lots of scobies they will eat it faster naturally.
I strain my kombucha through a fine mesh filter as the scobies creates these stringy things so you may also want to get a fine mesh filter but you can drink it as it but the kids complain lol
